This recipe is perfect for a Saturday date night in! I put the chicken in the crock pot around 1:00pm, and by 7:00 it’s perfection. And then, this:
So, this recipe changes up a bit every time I make it based on whatever is in the kitchen. I don’t really have a set recipe, but I always start with sliced onions to cover the bottom of the crock pot with a few whole garlic cloves, then I add carrots. I cover the carrots and onions with vegetable stock, then put the chicken on top. I then add some more vegetable stock, about half way up the chicken, a splash of white wine (if there’s any in the fridge) and juice from two lemons. Lastly, I cover the chicken in spices (typically parsley, oregano, ground fennel, black pepper, and a couple bay leaves).
While the chicken is in the crockpot, after about 1 hour I start basting it every half hour or so. This isn’t necessary, but it helps to check on it and make sure the juices don’t overflow since the chicken will throw a lot of extra juice while it cooks.
Once it’s done, the chicken just falls right off the bone. It really is the perfect, easy, Saturday night dinner. Added bonus: leftover chicken for lunches during the week!
